What's the best motivation for Tuesdays? TACO TUESDAYS! Here's one of my favorite recipes that has been passed down for generations in my Florida family. SHRIMP CEVICHE TACOS
Ingredients: small shrimp (51/60 to be specific), limes, red onion, tomato, mango, cilantro, salt and pepper, tacos shells of your choice (I use flour soft tacos).
Cooking the shrimp: Bring a large pot of lightly salted water to a full boil. Add shrimp and cook for 4ish minutes or until the shrimp are pink. Strain the shrimp out of the boiling water. Immediately put the shrimp into a sink or large bowl of ice water to stop the shrimp from boiling in the shells. De-shell.
Preparing Ceviche: Juice limes and marinate shrimp for about an hour. Add diced red onion, tomatoes, mango, cilantro and salt and pepper to taste. Put spoonfuls of ceviche onto taco shells and add sour cream or eat as is. Also great on a salad or by itself!
Add a little Florida to your dinner tonight!
